Food for Thought

Because I'm PMSing too badly to think about anything new, I am simply cutting and pasting an email that I sent to Rex. It's where I am at these days, and perhaps some of you are, too. Happy Monday.

Hi babe -

I might be at the post office/cleaners when you come home (My Ebay sales hit the roof at a show stopping 12.75! Whoo hoooo! Let's get the new kitchen now!)

Speaking of, I will be back by 6 the latest. We’re doing Taco Tuesday tonite since I’m having a Manic Monday. Hopefully this switch in schedule won’t send everyone rioting in the streets. And if you are going to riot, please make sure the kids look both ways first before crossing.

Here’s the menu for the rest of the week:

Tuesday: Pea soup
Wednesday: Enchildas
Thursday: Pasta
Friday: Meatloaf
Saturday: Who the fxx knows.
Sunday: Some kind of bbq for Father’s Day or food out.

I have made a decision that we are going to continue eating healthy, so that means preparing a bit in advance. Lest you think I have turned into Holly Homemaker, lets be clear that I will probably burn the soup, overcook the pasta, and if the pan gets black, it’ll sit for three days in the sink while you bitch that one more William Sonoma skillet has hit the dust. And if you have a meal request, write it on the to-do list on the fridge so I can ignore it.

God forbid you get excited about my culinary attempts, right?

Love you.

PS: For you readers out there, if you loved me, you would send me a quick and easy recipe either via the comments or email. Texas Dottie, Texas Lizzie, Mrs. V., Toni, Velvet Vox, Knock knock... you all know who you are. And if I don't know you, let me learn to love you through your posts. (Or not.)

Hey, I'm totally impressed that you even attempt a thought out menu. I should. But I'm not that organized. And even if it doesn't work out, it's the thought that counts, right?

Super fast meal idea?

Grocery-store roasted chicken (yeah, ya gotta shred it and touch all it's glisteny, slickery, greasiness, but since you change diapers, I figure you ain't easily icked out.)
Bag o'Romaine (maybe even the Ceasar kind - cuz it comes with it's own dressing!)
Various child/husband friendly veggies
Mix it all up and ya got Chicken Caesar Salad. A little french bread? Yumm-o, as that nutty beyotch, Rachel Ray, would say.

Ooo...and Classico makes a tasty Roasted Garlic Alfredo sauce. Add the aforementioned chicken, warm through and toss with your favorite pasta.

And please tell me you got that Bar Keepers's Friend stuff. It really works on the 3 day old black crusty stuff. Trust me.

It's late - I'm off to bed!

I don't have the barkeeper friend's stuff. What is that? Is it a William Sonoma deal? Good idea for a quick salad/chicken. Thanks!

Bar Keeper's Friend (Best since 1882) Removes Rust! (Quita el oxido!) Stainless Steel, Fiberglass, Porcelain, Glass Cooktops, Copper (although, in my experience, not so amazing on copper), Tile, Brass.

Uh, yeah, I'm a dork and got the can from the kitchen. The gal at Williams Sonoma recommended it for our All-Clad and it. is. awesome. And I love it for my sink. And the little crevices in my knives that get rust in them if I wash them in the dishwasher (this is a mystery that's been plaguing me).

Huh. I wonder if my chicken comment was inspired by your Sunday post?

I'm suddenly reminding myself of the joke: How many kids with ADD does it take to change a lightbulb? Wanna ride bikes?

Got this from Cooking Light mag - cook the meatloaf in muffin tins. Cuts the cooking time by 2/3. Then you can throw leftovers in a freezer to reheat later.

We do one of those roasted chickens every week now; I do a little bag of new potatoes w/crushed rosemary, salt & pepper - nuke 12 min. & those veggies in the special bag you can just throw in the microwave and cook in 5 min.

Though since I buy those chickens cold (for a buck less) and reheat and it's getting too hot for that, I'm considering trying a small one in the crock pot to save our house from the heat.
